I’ve got something very special for you this morning. We’re cooking here at Doctors Hospital with Chef Brian Crosson and Registered Dietitian Lizzie Keen. They’re going to show you how to cook first greens.
Keen says, “We’re going to do a little cooking demo for you demonstrating how to make some healthy changes with your typical traditional New Year’s dishes so over here we have greens.”
Chef Crosson says, “Traditionally. it has meat in it ham base which has a lot of sodium a lot of people and sugar. We’ve taken the sugar out and replaced it with rice vinegar which naturally has sugar in it. Replace the smoked pork with the smoked turkey neck, which takes out some of the sodium and I also replaced the ham base with a low sodium chicken base which is taking some of the sodium out."
