1 teaspoons salt, plus more for water 2 fresh ears corn (or 1 c. frozen if not in season) 1/2 lb. green beans, trimmed and cut into 1/4-inch pieces 1/2 pound wax beans, trimmed and cut into 1/4-inch pieces 1/2 small red onion, cut into 1/4-inch pieces 1 English cucumber, peeled, seeded, and cut into 1/4-inch pieces 4 plum tomatoes, seeded and cut into 1/4-inch pieces 1 small red bell pepper, seeded and deveined, cut into 1/4-inch pieces 1 small yellow bell pepper, seeded and deveined, cut into 1/4-inch pieces 1 medium jalapeno pepper, seeded and deveined, minced 3/4 cup fresh cilantro leaves 2 tablespoons good quality extra-virgin olive oil 2 tablespoons red wine vinegar 1 teaspoon freshly ground black pepper
Add salt for taste
1. Fill a large bowl with ice water and set aside. Fill a medium saucepan with salted water and bring to a boil. Add corn, and cook just until tender, about 5 minutes. With tongs, remove from water, and plunge immediately into ice water. When corn is thoroughly cooled, remove from bowl. Cut kernels off cobs and transfer kernels to a large salad bowl. (If using frozen corn, simply thaw and add to bowl.) Add green and wax beans to boiling water. Cook just 1 minute and remove with a slotted spoon, then drop into ice water. When beans are thoroughly cooled, drain in a colander.
2. Add green and wax beans, tomatoes, red and yellow peppers, onion, cucumber, cilantro, and jalapeno to corn. Stir. Add olive oil, vinegar, salt, and pepper. Stir again and adjust for seasoning. Serve immediately for brightest colors and freshest flavors!
